Fermentation
People have long used micro-organisms such as yeasts and bacteria to modify foods for preservation digestibility, and flavor. This process, generally called fermentation, involves the conversion of carbohydrates (including sugars) into ethanol (alcohol), carbon dioxide, or organic acids (especially lactic).
